Mediterranean Grilling
A few readers have asked for healthy recipes. With spring in full bloom and yummy goodness sprouting at local farmer’s markets, now is a great time to start with some healthy eating. This recipe is as quick as any crock pot recipe (Ok, maybe not since it requires more than just dumping a block of cream cheese or cream of ‘something’ soup in. But the healthy rewards make your investment time worthwhile). I did think quite a bit about which healthy recipe to include first. It was hard to narrow it down, but I chose Mediterranean-inspired chicken kabobs. The more ingredients you can pick up from your local farmer’s market, the better.
- 3 tbsp olive oil (extra virgin)
- 1 tbsp red wine vinegar
- 1 tbsp fresh squeezed lemon juice
- 1/4 cup minced red onion
- 1 garlic clove, minced
- 1 tbsp fresh oregano
- coarse salt and fresh ground pepper, approx 1/2 tsp each
- 1/2 lb. boneless chicken, cut into 1-inch cubes
