A few readers have asked for healthy recipes. With spring in full bloom and yummy goodness sprouting at local farmer’s markets, now is a great time to start with some healthy eating. This recipe is as quick as any crock pot recipe (Ok, maybe not since it requires more than just dumping a block of cream cheese or cream of ‘something’ soup in. But the healthy rewards make your investment time worthwhile). I did think quite a bit about which healthy recipe to include first. It was hard to narrow it down, but I chose Mediterranean-inspired chicken kabobs. The more ingredients you can pick up from your local farmer’s market, the better.

Grilled Chicken Kabobs

Ingredients:
  • 3 tbsp olive oil (extra virgin)
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh squeezed lemon juice
  • 1/4 cup minced red onion
  • 1 garlic clove, minced
  • 1 tbsp fresh oregano
  • coarse salt and fresh ground pepper, approx 1/2 tsp each
  • 1/2 lb. boneless chicken, cut into 1-inch cubes
Directions:
Pre-heat grill at a medium heat. Stir together the first seven ingredients.  Add the chicken pieces and coat evenly with the marinade. Cover and refrigerate for at least 1 hour. Once the chicken has marinated long enough, thread metal skewers with chicken pieces. If using wooden skewers, pre-soak them so they don’t catch on fire when grilling. Note: Make sure you wash your hands often when working with raw meat. Another note, I like to add red onion pieces on my skewers with the chicken just to get a vegetable in. Place skewers on the grill and turn as each side cooks. When the chicken is nicely cooked on all sides and juices run clear/no pink meat is showing, remove from grill. Each grill is different, but you’ll grill each side around 4-5 minutes. Serve with side of brown rice or Greek salad. Add warmed wheat pita points for a nice touch.
